  • 1/2 ts ground nutmeg
  • 1/2 c pudding mix, instant, vanilla
  • 2 ts vanilla extract (up to 3 ts)
  • 1 c egg beaters 99% egg
  • 1/4 c sugar or 6 pkts equal

Place all of the ingredients in a blender, and blend for 30-60 seconds, or until smooth. Chill for several hours. Shake or stir eggnog well to blend before serving. Serve in glasses or mugs with an additional sprinkle of nutmeg. NOTES : I just made some today and it is the best lowfat eggnog I have ever had - it is even thick!
