This came from Terri Craven and is the best potato salad I have ever come across. I make pretty much as the recipe calls for, but is also a good one to add personal preferences (I.e. Pickle juice, herbs, relish, etc.)

  • 1 cup celery chopped
  • 1/2 cup red onion diced
  • 1 teaspoon mustard
  • 5 big baked potatoes cut into cubes
  • 10 eggs; hard-boiled grated
  • 2 cups low fat mayonnaise
