  • 1/4 cup vegetable oil
  • 1 tablespoon sugar
  • 1/4 cup white vinegar
  • 1 tablespoon dry sherry optional
  • 2 cloves garlic coarsely chopped
  • 1/2 med green cabbage cored and thinly sliced
  • 1/4 cup chppoed parsley

Put oil, vinegar, sherry, 2 tbsp. water, garlic, sugar and salt into a blender/food processor and puree until smooth. Put cabbage into a large bowl and sprinkle parsley on top. Pour dressing over slaw and toss well. Cover and refrigerate for at least an hour before serving.
