  • 1 teaspoon black pepper
  • 1 large green pepper chopped
  • 1 cup vinegar
  • 10 cups tomatoes peeled and chopped
  • 1 large red pepper chopped
  • 5 cups onion chopped
  • 2-3 yellow banana pepper chopped
  • 2 jalapenos* chopped
  • 1/4 cup sugar*
  • 4 teaspoons pickling salt**
  • 1 large tomato paste
  • 1/2 bunch fresh cilantro

Simmer 1/2 hr, stirring often, at the end of cooking time add 1/2 bunch of cilantro if desired. Jar and process, 35 minutes for pint jars and 45 minutes for quart jars. Makes 8 pints Enjoy! *We use less sugar and more jalapenos. **Pickling salt is best when canning as it does not cause clouding of canned goods. Makes 8 pints
