  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 2 c all purpose flour
  • 1 1/2 c bananas about 4
  • 4 tbsp oil
  • 2/3 c brown sugar firmly packed
  • 1/2 c applesauce unsweetened

1. In a bowl combine flour, baking powder, baking soda, salt and cinnamon. Mix together. 2. In a separate bowl combine bananas and egg, mix til smooth; add oil, brown sugar, applesauce and vanilla. Mix thoroughly. 3. Add banana mixture to flour mixture. Mix together, do not over mix. fill muffin pans and bake 375 degree for 22-25 minutes.
