  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh chives
  • 3 tablespoons chopped fresh flat-leaf parsley

Preparation Pulse herbs in a blender with lemon juice and 1/2 cup mayonnaise until puréed. Add remaining 1/2 cup mayonnaise, salt, and pepper and blend well. Transfer to a bowl and chill, covered, at least 2 hours to allow flavors to blend. Cooks' note:• Green mayonnaise can be chilled up to 1 day.
