  • 1/4 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 cup white vinegar
  • 1 tablespoon yellow mustard
  • 2 tablespoons fresh parsley chopped
  • 1 small onion grated
  • 5 cups cooked potatoes cut in cubes
  • 1/3 cup mayonnaise hellmans
  • 6 eggs; hard-boiled sliced

While potatoes are still warm, add vinegar, salt, paprika and grated onion. Chill for a couple of hours. Just before serving, mix in mayonnaise, parsley, mustard and eggs. Add mayonnaise carefully as potatoes vary in quality and therefore the amount of mayonnaise may vary. NOTE: My mom used to make her own mayonnaise but I find Hellman's is the closest I could find.
