I know that Texans in particular will say that what I'm making here isn't chili, but I don't care what they think. This is a good recipe.

  • 2 bay leaves
  • 1 teaspoon kosher salt
  • 1 tablespoon chili powder
  • 2 cloves garlic chopped
  • 1/2 teaspoon black pepper ground
  • 1/4 teaspoon tumeric
  • 1 medium onion diced
  • 1 pound ground beef 80/20
  • 1/8 teaspoon cinnamon ground
  • 1 tablespoon cilantro dried
  • 1 cup corn kernels
  • 1 tablespoon cumin ground
  • 1/2 cup roasted cashews
  • 1 slice bacon diced
  • 1 medium poblano pepper diced
  • 1 small cherry bomb pepper diced
  • 1 small serrano chiles diced
  • 1 can chili beans 15 oz. or so
  • 1 can kidney beans 15 oz. or so
  • 1 can diced tomatoes fire roasted is nice
  • 1/2 can coca cola

Heat a large, deep pan and add the bacon, fry it until the fat just starts to melt. Add the peppers, onion and garlic, sauté until the onions start to turn translucent. Add the ground beef and bay leaves, brown the beef. Add the dry ingredients (chili powder, etc.) and stir. Add the cashew nuts and stir. Add the canned ingredients (beans, etc.). Don't bother draining them, you're going to want all that moisture. Add the Coca Cola. Make a mixed drink with the rest. That's it. Heat it and eat it. The cashews add a little crunch, the cinnamon adds a little wonder and the Coke adds a little sweetness.
