  • 8 large baking potatoes i use good quality potatoes like idaho
  • water to cover potatoes for boiling
  • 2 sticks margarine can use butter if you prefer
  • 1 tbsp olive oil to keep potatoes from boiling over

Peel potatoes and slice into 1/2 " slices (helps them to cook faster and makes them easier to mash). Rinse the potatoes under cold water. Place potatoes in large stockpot and cover with water - make sure you have about two inches of water above the potatoes Add Olive Oil to water Bring to a boil, reduce heat to medium and cover. Cook until potatoes are fork tender (From 10 to 15 minutes) Drain the potatoes and put them in a large crockery bowl (something good for mashing them with a hand mixer - might as well make it something nice for serving them in too) Add butter and add a good tablespoon full of salt to start Mash potatoes with hand mixer on low to medium speed until all the lumps are gone Add milk and mix just until the milk is incorporated. Add more milk if you like a smoother texture. Add more salt and blend in if needed Put a big dollop of butter on top of the potatoes and serve immediately
