I looked all over for this recipe! I had a hard time finding a all bran muffin recipe using only brown sugar. This is a great recipe to add whatever you want to it. (Nuts, raisins, cranberries etc...) They can also be frozen. Not sure how long though, they never last long enough. Enjoy!

  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1/4 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 3 tablespoons vegetable oil
  • 1 1/2 cups all purpose flour
  • 2 cups all-bran cereal
  • 1/3 cup brown sugar firmly packed
  • 2 egg whites lightly beaten

Combine cereal with sugar & milk and let stand in a mixer bowl for about 2 mins. In a medium size bowl, add together flour, baking powder, cinnamon, nutmeg & salt. Add egg whites and oil to cereal mixture and beat well. Add flour mixture, mix until combined. Spray a 12 muffin pan with Pam or some other cooking spray. Use an ice cream scoop to fill muffin pan 3/4 of the way. Bake @ 375(F) for about 15 minutes.
