  • 1 tablespoon lemon juice
  • 1/2 cup raisins
  • 2 cups shredded carrots
  • 1 tablespoon brown sugar
  • 3/4 cup mayonnaise
  • 1/4 cup plain greek yogurt
  • 1 large apple (i used a fuji apple)
  • 1/2 cup fresh pineapple (diced)
  • 1/3 cup purple seedless grapes (halved)

Core, peel and dice the apple. Add the apple to a small mixing bowl and toss with lemon juice (this will keep the apple from browning). In a large mixing bowl, add all of the ingredients and gently toss to coat. Cover and chill for at least 2 hours before serving.
