  • 2 eggs slightly beaten
  • 1 c chopped pecans
  • 3 c cooked, mashed sweet potatoes
  • 1 c scant sugar i life a little less than a cup
  • 2/3 c melted butter cooled
  • 1/3 stick butter softened
  • 1 c brown sugar i use a little less

Mix together the first 6 ingredients, thru vanilla. Pour into a greased 2 qt casserole dish or similar. Combine together remaining ingredients, butter, brown sugar and pecans until crumbly. Cover sweet potato mixture. Bake 350 for 45 minutes to an hour. This can be made ahead, bring to room temperature before baking or bake longer if cold from fridge.
