I wanted a good Macaroni Salad that went well with BBQ's. I took what I like from others and combined them into one and this is what I came up with and it has been a hit at BBQ's

  • 1 cup frozen peas thawed
  • 2 cups cheddar cheese shredded
  • 2 cups mayonnaise
  • 6 green onions sliced
  • 2 stalks celery thinly sliced
  • 3 cups uncooked salad pasta boil in water till tender, don't over cook
  • 4 hard boiled eggs
  • 1 1/4 cup dill relish or 1 10 oz jar
  • 1/2 cup carrot shredded and packed

Boil the eggs and let them cool..........cook the pasta, drain and allow to cool This makes a large salad so you will need a large bowl In large bowl add the pasta, eggs, carrot, celery, green onions, peas, cheese mix well Add the relish and mayo, this you have mix well enough to coat, you made have to add more mayo till you coat it to your preference.
