Classic margaritas are a mix of agave-based spirits, orange liqueur, lime juice, and sugar. In this recipe I omit the orange liqueur; I think it muddles the taste. Instead I twist an orange rind over the surface of the drink before I serve it. The ratios in this recipe work for many sour drinks, so use it as a master recipe.

  • 58.5 ml light-bodied tequila like espolã³n
  • 76 ml filtered water
  • 12 ml clarified lime juice
  • 18.75 ml simple syrup
  • 4 drops saline
  • 1 twist orange

Combine all but the orange twist and chill until almost frozen. Carbonate at 42 psi. Pour into a chilled flute. Express the orange twist over the top of the drink and discard.
