  • 1-2 cups shredded cheese cheddar or your choice

Cut 9 red potatoes that have been cubed and boil them for 10 minutes. Drain. Put the potatoes into a bowl and add Ranch dressing, garlic powder, paprika, salt, and pepper. Stir to completely coat the potatoes. Place them into a 9 by 13 baking dish. Bake in a 400 degree oven for 30-35 minutes. Remove the potatoes and top with 1-2 cups of shredded cheese. Stir again. Top with chopped chives and then serve.
