Nice winter greens type salad with the apple, cheese and walnuts

  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 6 cups torn kale leaves big ribs removed and discarded
  • 1/2 an apple cut into thin 1- inch pieces (i went with honey crisp, but gala would be good as well)
  • 2 tablespoons fresh squeezed lemon juice meyer lemons are the best
  • 1/3 cup walnuts chopped and lightly toasted
  • 1/4 cup blue cheese crumbled

Place the kale leaves into a large salad bowl, add the apples, walnuts, and blue cheese on top of the kale and lightly toss to combine. Dress the salad and lightly toss. For 1 serving at a time, Just prepare it all and assemble before eating each evening.
