  • 1 large tomato chopped
  • 1 tbsp. olive oil
  • for the salad:
  • 2 tbsp. orange juice
  • 1 lb. boneless skinless chicken breast cut into bite size chunks
  • 1 tbsp. honey
  • 1/2 sp. salt
  • 1/4 up extra virgin olive oil
  • 1 tbsp. apple cider vinegar
  • 1/4 sp. ground black pepper
  • 1/2 cup loosely packed cilantro leaves
  • for the tequila lime marinade:
  • 2 tbsp. tequila
  • 2 tbsp. lime juice
  • 1 tbsp. chopped cilantro
  • for the avocado lime salad dressing:
  • 8 cups lettuce (i used romaine)
  • 1/4 up orange juice
  • 1 ripe avocado peel and seed removed
  • 1/2 edium red bell pepper sliced (fresno chilies are good too)
  • 1/4 edium red onion sliced
  • 1/2 up shredded pepper jack cheese (or mexican blend)

Prepare the tequila lime chicken. Place all of the tequila lime marinade ingredients into a large zip top food storage bag along with the cut up chicken. Let the chicken marinade for a few hours, or overnight. Use a colander or a slotted spoon to remove the chicken from the marinade. Place the chicken into a nonstick skillet and cook over medium heat until cooked through (about 8-10 minutes). Set aside.Prepare the avocado lime dressing. Place all of the dressing ingredients into a blender and blend until smooth. NOTE: This will make a thick dressing. If you would like to thin it out, add a little extra orange juice or water to the dressing.Assemble the salad. Place all of the salad ingredients into a large bowl along with the cooked chicken. Top with avocado lime dressing.
