  • 1 tablespoon chia seeds
  • 2 cups ice
  • 4 medjool dates pitted
  • 1 large red sweet apple stem and core removed (leave the skin on*), cut into chunks
  • 2 tablespoons raw slivered almonds
  • 1/2 teaspoon ground cinnamon or apple pie spice
  • 1/2 teaspoon pure vanilla extract or 1/4 teaspoon vanilla bean
  • 1-2 inches ginger root skin removed (optional)
  • 1/4 cup gluten free oats
  • 1 cup unsweetened plain plant-milk (i used almond milk)

Place all ingredients in a high speed blender and puree until smooth and creamy. Taste and adjust as needed. Sometimes I add more ice for a thicker smoothie or more almond milk to thin out if needed. I might add an extra date or more cinnamon to boost the sweetness and flavor if needed.Serve immediately. Garnish with chopped apples, cinnamon and chia seeds if desired.
