These are my favorite roasted potatoes! It's a recipe I've made time and time. You get a crisp cheesy exterior and a melt-in-your-mouth fluffy interior. And I can't get enough of this flavor!

  • 1/2 cup grated parmesan cheese
  • 3 tbsp olive oil
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh rosemary
  • 2 1/2 lbs red potatoes, (cut into 1-inch chunks)
  • 1/2 tsp salt and pepper (or more to taste)
  • 3 cloves garlic (minced (1 tbsp))
