Place the vinaigrette ingredients in a mason jar, secure the lid and shake to mix the dressing. Set aside until ready to use.Heat a large pan over medium heat with the ½ tablespoons olive oil. Add the apple slices and cook for 30-60 seconds. Place the kale in the pan and sprinkle with a dash of salt and pepper. Cook, stirring continuously, for 1-2 minutes until the kale begins to wilt.Remove the kale and apples from the pan and transfer to a large bowl.
