  • 2 cups shredded red cabbage
  • 1/8 easpoonground ginger
  • 1 large honeycrisp apple thinly sliced
  • 1 bunch of green kale
  • 1/3 upschopped pecans
  • 1 scallion, sliced
  • 3 tablespoons olive oil- buy here
  • 2 tablespoons apple cider vinegar- buy here
  • 2 teaspoon maple syrup
  • 1/2 teaspoon dijon mustard- i like this brand

Place the vinaigrette ingredients in a mason jar, secure the lid and shake to mix the dressing. Set aside until ready to use.Heat a large pan over medium heat with the ½ tablespoons olive oil. Add the apple slices and cook for 30-60 seconds. Place the kale in the pan and sprinkle with a dash of salt and pepper. Cook, stirring continuously, for 1-2 minutes until the kale begins to wilt.Remove the kale and apples from the pan and transfer to a large bowl. Toss in the remaining salad ingredients to the bowl.Toss the entire salad with the vinaigrette, mix it all up, and serve!
