  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking soda
  • 3/4 cup old fashioned oats
  • 2/3 cup buttermilk
  • 1/4 cup wheat flour
  • 1/3 cup dried fruit ( i used chopped apricots)
  • 1/4 cup light butter
  • 1 tablespoon half and half
  • 1 tablespoon buttermilk (for brushing)
  • extra sugar (for sprinkling)

Preheat oven to 450 degrees.Mix together the dry ingredients.Cut in the butter using a fork or your hands until the mixture resembles bread crumbs.Add the dried fruit to the dry mixture.In a separate bowl, mix together the wet ingredients.Add the wet mixture to the flour mixture and combine until a soft and sticky dough is formed.Move the dough to a lightly floured surface and knead 2-3 times.Roll or pat dough into a 8-inch circle and cut into 8 pie-shaped slices.Place on a cookie sheet sprayed with non stick cooking spray.Brush buttermilk onto the tops of the scones and sprinkle with sugar.Bake 15-18 minutes.
