Chicken, sausage and shrimp make for a good gumbo

  • 1/3 cup vegetable oil
  • 1/3 cup all purpose flour
  • 1/2 teaspoon black pepper
  • 1/2 cup green pepper chopped
  • 4 garlic cloves or 2 t garlic powder
  • 1 large onion i only use 1/2
  • 1/4 teaspoon red pepper
  • 4 cups hot water or water from chicken
  • 1 pound chicken or whole chicken boiled
  • 12 ounces smoked sausage cut up
  • medium shrimp optional
  • frozen sliced okra

Make a roux using the oil and flour (stir until turns slightly brown). Saute' onion, green, red, and black pepper and garlic. Gradually stir in water (or chicken broth) and chicken. Bring to a boil. Simmer. Add sausage and okra. Add shrimp shortly before serving. Serve over rice. Roux can be made a few days ahead of time.
