This is a wonderful paleo solution to rice! And it really beats brown rice, IMHO. If I am going to splurge on rice, I want basmati, with saffron, thank you. And popadom and lamb. But when I want healthy rice, which is 99% of the time now, this is my go to! It's got a very similar texture, not much flavour, and you don't feel bloated after! Get out your grater and try it!

  • 1/4 cup water
  • 2 cloves minced garlic
  • 3/4 tsp sea salt
  • 1 cauliflower, cut and grated
  • 2 tsp olive oil
  • 1 diced cooking onion or green onion
  • 1 tsp whole cumin seeds optional
  • 1 tomato diced
  • other veg optional

1) Heat oil in large skillet and sautee cooking onion, cumin, and garlic until soft over med heat. Add other veg if you want them and sautee them lightly. 2) Add cauliflower for 5 min.
