  • 1 can (8 1/4 - oz) crushed pineapple i drained

Preheat oven to 375 degrees Position shredding blade in bowl and add carrots. Add the one cup of sugar, eggs, oil, baking powder, baking soda, cinnamon, salt, and mace. Process 30 seconds. Add the flour to combine and process 30 seconds. Add pineapple. Pulse until just mixed about 2to3 seconds. Turned into a greased 9-inch baking pan. Bake until cake springs back when lightly touched inthe center about 30-35 minutes. Cool and remove from baking pan if desired. Frost with Cream Cheese frosting
