1 Boil the noodles and seasoning mix according to package directions. Drain pasta but reserve 1/3 cup pasta water. 2 In a small bowl, whisk together the peanut butter and soy sauce. Add a couple tablespoons of water to thin it out if needed. 3 Add the peanut butter mixture and chicken to the noodles. Toss to combine. Add as much pasta water as needed to thin the sauce. 4 Serve as is, or garnished with sliced scallions.
