Biscuits (Jimmie's)
I received this recipe from my mother-in-law and I have used it for years. Great recipe! I was also told by my mother-in-law that if you make a small indention with your thumb in the center of each biscuit, they will bake and rise evenly.

Preheat oven to 425 degrees. In a baking sheet pan, add enough oil to coat the bottom. In a large mixing bowl, whisk together the flour, baking powder, and sugar. Add just enough milk to where you can start to work it on the counter, about 1 3/4 cup. (The dough will be soft, moist, and still be a little sticky). Turn the dough onto a flour sprinkled counter (or sheet of wax paper). Gently knead the dough, folding it into itself 3-4 times using a light hand. Pat the dough out to a 1/2" thick layer. Cut rounds with a 3" biscuit cutter or glass dipped in flour first. Arrange biscuits on the baking sheet pan about 1" apart and then flip them to coat the tops with a little oil (or butter). Let the biscuits set and rise for about 10 minutes. Bake for 15 minutes or until golden brown. Remove and let stand to cool 2-3 minutes before serving.
