You can substitute Turkey, Lite, or Beef Kielbasa. I have used all of them one time or another. I prefer the real thing or Beef Kielbasa. I wouldn't recommend the Turkey Kielbasa. The beef, and lite not only has less calories but, they are packaged with less weight. I usually add a salad with the meal to keep from having seconds. That way there is some left over for lunch the next day. DD's original recipe calls for a small can of tomato paste. I don't use it.

  • 1 teaspoon dried oregano
  • 1 each bay leaf
  • 1 medium onion peeled and chopped
  • 1 each green pepper chopped
  • 1 each polska kielbasa your choice
  • 2 teaspoons extra virgin olive oil depends on which sausage used
  • 1-15 oz can tomato sauce
  • 2-14,5 oz cans diced tomatoes
  • 1-15 can kidney beans
  • 1 tablespoon ground red pepper or to taste

1. Slice Kielbasa into bite size pieces. Chop onion and Green Pepper. 2. Add oil to skillet, if using. Saute Kielbasa, onion and green pepper for 2 to 3 minutes. I like a little crunch to my veggies. 3. Add the rest of the ingredients. Simmer covered for 20 minutes or so. Remove the bay leaf. 4. Serve with crunchy bread, corn bread or crackers.
