As we always celebrate Valentine’s Day with a dinner with our son the night before the actual celebratory night, last night I decided to add a drink to the mix. Having fresh mangoes I had fun creating my version of a Mango Martini. Pretty smooth and tasty. As I was creating something new for us, I also wanted to prepare a recipe that has been in my file folder for over 22 years and that I do not remember the last time I actually made it: Spinach salad with warm bacon and mustard dressing. Dinner was quite simple and we had a great pre Valentine’s Day celebration.

  • 1 teaspoon olive oil
  • spinach washed and hard stem removed
  • bacon cut into â½ inch pieces
  • 2 teaspoons dijon mustard

In a small frying pan fry the bacon until crisp. Meanwhile wash the spinach and set aside. In a large bowl mix together the mustard, pepper and the olive oil. When the bacon is done add half the bacon to the mix and most of the bacon rendering. Add the salad and mix well, taste and add salt if need be. Add the remaining bacon to the salad and serve. The salad leaves need to be well coated. Add more mustard if need to
