My sister gave me this recipe. We've both been making it for years. I use Bruce's canned yams or Princess canned sweet potatoes.

  • 3 large eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup vegetable oil
  • 1/2 tsp salt
  • 2 cups granulated sugar
  • 1 tsp ginger
  • 1 tsp baking soda
  • 3 cups all purpose flour
  • 1/4 tsp baking powder
  • 2 cups canned sweet potatoes or candied yams mashed
  • 1 tsp cloves ground
  • 1 cup walnuts chopped (optional)

Preheat oven to 325 degrees. In a large mixing bowl, combine sugar, oil, egg, sweet potatoes and vanilla. In a separate bowl, mix dry ingredients (except walnuts) together well and add to wet ingredients. Stir until just combined. Fold in walnuts. Pour into 2 standard (9 x 5) loaf pans. Bake for 75 minutes or until thin knife inserted in center comes out clean.
